New Year's Resolution Update...
Who is keeping up with their New Year's Resolutions? I am doing great on some of them and so-so on others. So far so good with the crafting ones...this is my set of 12 Christmas/Holiday cards that I made for February. I actually made a few extra too - yippee. Keeping them simple helps me to make sure that I get them done. I love doing it this way because If I stay on track, I will actually have over 100 holiday cards done before November 1st and I can then just focus on making sure I get a good family photo - haha!

Recipe Time: Crockpot Gyros
I made this yesterday night for the family. It had mixed reviews....1/2 the family gobbled it up and begged for more, 1/4 of the family thought it was good, but for the money spent on some of the ingrediants (since they weren't on sale) didn't see the savings of making it at home and the other 1/4 of the family wouldn't touch it - LOL. I do recommend you try it at least once though if you love gyro's like we do!!
Crockpot Gyros
Ingredients
1 lb ground veal
1/2 lb ground turkey
1 tsp paprika
1 tsp kosher salt
2 tsp oregano
1/2 tsp ground black pepper
1/2 large onion, chopped
4 garlic cloves, chopped
1 lemon (OR 2 Tablespoons Lemon Juice)
Pita or Flat bread Rounds
Feta Cheese
Chopped lettuce
Tomato
Tzatziki Sauce
Directions
In a bowl, combine ground veal and ground turkey. Add paprika, salt, pepper and oregano. Place in food processor and pulse until well condensed.
Place chopped onion and garlic at the bottom of slow cooker. Mold meat mixture into a medium sized loaf. Place loaf over the top of the onion and garlic in slow cooker.
Slice lemon in half and squeeze over the top of the meatloaf.
Cover and cook 4-5 hours on HIGH.
Slice meat and serve in pita bread with lettuce, tomato, tzatziki, and feta cheese.

Pixie Stick Bouquet Craft Class
For February the kids did a pixie stick bouquet class at the class I taught at school. Sorry for the washed out colors on this...it's really much more vibrant in real life...I had to take the pic inside with a flash late at night.
Lots of punches and some gems/jewels create cute little flowers out of the pixie sticks. Put them in a clear glass vase or small glass wtih some paper shreds, tie a ribbon and viola!

Thank you note
Yeah, I know I already have a ton of thank you notes, but I found a "cute little kit" that was on clearance in my stash and decided to put it to good use. The kiddo's received a late holiday gift and I made them write their thank you note in it. I tweaked the kit a smidgen adding the gems on the side with some corresponding c/s that wasn't included in the kit. Still it's a simple creation.
