First, I can't take credit for this soup recipe, but it is insanely delicious! Credit goes to blogger High Heels & Grills who got the recipe from her sister :) Back to the soup...It is awesome and so easy and this is coming from someone who does not like "spicy stuff" and there's a definite kick to it that I can taste, but I can tolerate it. (If you want to kick it up a notch, go for a spicy taco seasoning and you can add in hot sauce to your own bowl!) Plus there are less than 300 calories per cup! What a Bonus!! This is a great recipe for the cold winter months too...enjoy!
Here we go...
Ingredients:
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 (14.5 oz.) can petite diced tomatoes, drained
1 (15.25 oz.) can sweet corn, drained
1 (12.5 oz.) can white chicken breast, drained
1 (10.75 oz.) can cream of chicken soup
1 (10 oz.) can green enchilada sauce
1 (14 oz.) can chicken broth
1 packet taco seasoning
Directions:
Mix all ingredients together in a large pot.
Heat until warm, stirring occasionally.
Serve with tortilla chips or tortilla strips (the kind that go on salads!)
